CHILORIO’S (pronounced CHEE-LOREO’S)
We are what a Mexican restaurant is supposed to be: authentic, healthy, clean, and modern. We prepare everything, including tortillas and our 12 different salsas daily, from scratch, and most notably, while you watch.
HISTORY
I (Diego Cortes) have always been intrigued and passionate about the food industry, particularly Mexican food. When I was studying for my MBA at the Wharton Business School with an entrepreneurship major, my friends and I were always looking for fresh and healthy Mexican restaurants that offered authentic Mexican food at moderate prices with a comfortable and inviting ambiance, but all we could find at moderate prices whereTex-Mex greasy restaurants that lacked the quality, Mexican flavors and consistency.
We also found other big chain, "Mexican" restaurants, owned by major fast-food franchises that had the quality and consistency in their food, but lacked ambiance and true Mexican flavors. So, in lieu of a good alternative and with my passion for Mexican food, I decided to dedicate my time to create a modern, authentic, healthy and fresh Mexican fast-casual restaurant and so my dream began.
Back in Mexico, I teamed up with one of the most recognizable chefs in Mexico to create the menu including all original recipes. A nutritional expert joined the team to test and validate the recipes. The marketing team started with the company image and I teamed up with one of the best architects and designers in Mexico to create a truly modern Mexican ambiance.
It only makes sense that a Mexican entrepreneur with a passion for great Mexican food owns and operates a Mexican restaurant.

Chilorio’s believes in the quality of its food and its people because they are the ones who make the difference between good and exceptional. We also strongly believe in the integrity, hard work, loyalty, honesty and personal hygiene of our employees.
Manifesto
We are "VERY MEXICAN". That means more than the type of food we serve, although most recipes are from our Mama ... it's who we are, the culture we're from ... it's not some theme or something that comes from hanging a Sombrero on the wall. With that said, we do look good in Sombreros. We believe you know the difference and deserve the FRESHEST HOMEMADE products. That's right, anything goes here, EXCEPT prepackaged, processed foods, microwaves, can openers and freezers ... we leave that to others. WE MAKE IT ALL RIGHT HERE! We have whole wheat and low fat options, too ... Hey, we like to fit in those skinny jeans, also. WHAT'S IN A NAME? Chilorio is a saucy subject, literally. It's our Country's famous sauce ... the one that make our dishes that much better than the rest. Need a little extra? Who doesn't? We have a great selection of daily homemade salsas in all degrees and tastes. Will we laugh behind your back if the heat gets to you or think less of you if you go for the mild? Yes, but we promise to be subtle. Chilorio's is about authentic, slow cooked food, served FAST and FRESH.
