Position Title: Cook/Prep
Reports To: SHIFT / FLOOR MANAGER
Job Summary:
• Responsible for all grilled, broiled or roasted items prepared in the kitchen. Portions food items prior to cooking, such as steaks, chicken or fish fillets. Needs to adhere to the product manuals, sensitivities and plate presentations. Preparing salsas, cold vegetable and fruit items, preparing all hot prep items, stocking food and supplies, reading and understanding recipes, ensuring all items are made correctly, maintaining cleanliness and sanitation, performing clean up duties, assisting other staff members.
• To learn and become validated in all aspects of the prep area stations:
o Provide and maintain a clean, safe work environment
o Keep a well-maintained, stocked, ready-to-go work area

o Cold Sauce Cook
o Hot Sauce Cook
o Meat/Cheese/Seafood Prep Cook

Position Tasks:
• Use of kitchen equipment:
o Tortilla maker
• Making tortilla dough and preparing tortillas
o Prep
• Preparing all food requiring cooking in the restaurant
• Cooking and cutting grilled meat products as close to the time they are served as possible
• Cooking small batches of grilled chicken, meat and seafood products several times during the shift
• Prepare raw product for cooking
• Pull thaw items as needed
• Perform a raw product quality check on all ingredients prior to use
• Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption
• Weigh, measure, and mix ingredients according to strict recipes using various kitchen utensils and equipment.
• Maintaining cleanliness and sanitation:
o Performing clean up duties.
• Maintaining and cleaning kitchen equipment
• Washing pots, pans, utensils, bowls, etc.
• Maintaining a sanitary kitchen workstation
• Maintaining and cleaning restaurant area
• Maintaining personal clean and hygiene at all times
• Other tasks throughout the shift
• May be assigned to work multiple stations
• Organize storage area after shift
• Assist manager in receiving and storing deliveries
• Keep line organized and free from dirt, water and debris during and after each shift
• Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils
• Consult with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs
• Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices
• Ensuring that products are fresh at all times
• Ensures that all products are dated and rotated so that the oldest product is used first

• Must follow proper safety precautions at all times to prevent injuries. (Cutting gloves and slip resistant shoes required, never wear loose fitting clothing)
Equipment used:
• Walk-in cooler, mixer, rolling pin, round, sheet pans, plastic bags, tortilla press, griddle, can opener, spatula, towels, cleaning solutions, parchment paper, scale, measuring utensils, broom, dust pan, mop, water hose, squeegee, among others.
Position Requirements:
• Must be 18 years or older
• Previous cook/kitchen experience, in a high volume, fast-casual restaurant setting preferred
• Ability to remain stationary for periods up to 4 hours in length, continuous standing (100%) and walking or moving (20%)
• Ability to lift and carry sacks and cases of up to 70 lbs., up to 20 times per shift: places these items on high shelves and in walk-in fridges and freezers
• Frequent reaching/ grasping/ handling, frequent pushing and pulling (0-30 lb.), frequent stooping/ bending/ crouching
• Bilingual skills in English and Spanish preferred. MUST speak English
• High school diploma or GED equivalent desired
• Ability to remember information such as words, numbers, pictures, and procedures
• Ability to speak clearly so others can understand
• Ability to quickly identify safety placards and hazardous situations in order to avoid or minimize injuries and property damage
• Ability to Identify food quality through taste, texture and/or color
• Ability to use small tools, utensils and equipment which require good manual dexterity, in a safe and effective manner
• Ability to tolerate heat from ovens, lamps and stoves
• Must adhere to Chilorio's uniform (never wearing loosely fit clothing), procedure and performance standards and policies and MUST maintain a clean and professional image
• Must be able to hear kitchen or manager requests in the midst of loud background noise
• Hazards include, but are not limited to, cuts from knifes, broken glass and metal cans; burns, slipping and tripping
