Line Cook

Job Summary

 

 

•    Responsibilities include reading tickets, making orders, broiler, ensuring all items are made correctly, communicating with other cooks, prepping product as needed, maintaining cleanliness and sanitation, performing clean up duties, assisting other staff members, counting prepped product
•    To produce all assigned menu items in an efficient and consistent manner while following the specifications, recipes and techniques of the company
•    Needs to adhere to the product manuals, sensitivities and plate presentations
•    Preparing salsas, cold vegetable and fruit items, preparing all hot prep items, stocking food and supplies
•    Maintaining cleanliness and sanitation, performing clean up duties, assisting other staff members

•    To learn and become validated in all aspects of the prep area stations:

o    Provide and maintain a clean, safe work environment
o    Keep a well-maintained, stocked, ready-to-go work area
o    Vegetable Prep Cook
o    Baker Prep Cook
o    Cold Sauce Cook

Position Tasks:


•    Maximize the guest experience by cooking small batches of grilled meat and seafood products several times during the shift, cooking and cutting grilled meat products as close to the time they are served as possible
•    Will be assigned to multiple stations throughout the shift
•    Responsible for the build-up of all the products such as Burritos
•    Set up line station
•    Prep any product needed, read all tickets, prepare orders, coordinate orders with other stations, communicate with other stations and expediter, make food orders, ensure quality food, keeps area clean, maintain cleanliness and sanitation
•    Meet specified cook times, accurate recipes and presentations, ensures quality products at all times, teamwork, maintain costs.
•    Must follow proper safety precautions at all times to prevent injuries. Cutting gloves and slip resistant shoes required.

•    Use of kitchen equipment:

o    Tortilla maker
•    Making tortilla dough and preparing tortillas

o    Prep
•    Preparing all food requiring cooking in the restaurant
•    Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption
•    Weigh, measure, and mix ingredients according to strict recipes using various kitchen utensils and equipment.

•    Maintaining cleanliness and sanitation:

o    Performing clean up duties.
•    Maintaining and cleaning kitchen and line equipment
•    Washing pots, pans, utensils, bowls, etc.
•    Maintaining a sanitary line/kitchen workstation
•    Maintaining and cleaning restaurant area
•    Maintaining personal clean and hygiene at all times

•    Other tasks throughout the shift

•    May be assigned to work multiple stations
•    Organize storage area after shift
•    Assist manager in receiving and storing deliveries
•    Keep line organized and free from dirt, water and debris during and after each shift
•    Observe and test foods to determine if they have been cooked sufficiently
•    Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices
•    Ensures that products are fresh at all times
•    Ensures that all products are dated and rotated so that the oldest product is used first

Job modifications:


•    This position can be modified by reduction of hours and shifts per week

Position Requirements:


•    Must be 18 years or older
•    Previous line/cook/kitchen experience, in a high volume, fast-casual restaurant setting preferred
•    Ability to remain stationary for periods up to 4 hours in length, continuous standing (100%) and walking or moving (20%)
•    Ability to lift and carry sacks and cases of up to 70 lbs., up to 20 times per shift: places these items on high shelves and in walk-in coolers
•    Frequent reaching/ grasping/ handling, frequent pushing and pulling (0-30 lb.), frequent stooping/ bending/ crouching
•    Bilingual skills in English and Spanish preferred. MUST speak English
•    High school diploma or GED equivalent desired
•    Ability to remember information such as words, numbers, pictures, and procedures
•    Ability to speak clearly so others can understand
•    Ability to quickly identify safety placards and hazardous situations in order to avoid or minimize injuries and property damage
•    Ability to Identify food quality through taste, texture and/or color
•    Ability to use small tools, utensils and equipment which require good manual dexterity, in a safe and effective manner
•    Ability to tolerate heat from ovens, lamps and stoves
•    Must adhere to Chilorio's uniform, procedure and performance standards and policies and MUST maintain a clean and professional image
•    Must be able to hear kitchen or manager requests in the midst of loud background noise
•    Hazards include, but are not limited to, cuts from knifes, broken glass and metal cans; burns, slipping and tripping
